Group products so shoppers can browse and filter.

Flow
- Create a category — name required; optional short blurb and image (AI blurb is fine).
- In each Product, assign the category.
- On the public shop, buyers filter by category tiles / filters.
Tips
- Deleting a category does not delete products — they become uncategorized.
- Renaming updates how products are grouped on the shop.
